Diego Rivera, the father of Mexican mural art, left a long list of foods that prehispanic peoples "gave" the world at the famous mural located in the City Hall of Mexico City. Maybe you will be surprised to learn that corn comes from this Aztec land, as well as the many different types of chiles -including "Hungarian" paprika. Beans, squash, tomato, vanilla, cacao (which the Aztecs called xocolatl), coffee, avocado, papaya, peanuts, turkey and even gum are also featured on the list.
In the same way the Mexicans were mixed with different indigenous groups, Europeans, Asians and Africans, its cuisine became a mixture of all those cultures. Thus, sugar made friends with chile and pork befriended green tomatos.
The Mexican traditional cuisine was added to the UNESCO list of Intangible Cultural Heritage of Humanity in 2010. Prehispanic agricultural techniques such as 'milpa' (a mixed cultivation system) and 'chinampa' (floating gardens) are part of this heritage, as are the traditional cooking methods which are still used today, such as nixtamaliation and traditional cookware like the metate (grinding stone), the molcajete (stone mortar) and the molinillo.
